Description

A rich, creamy, and indulgent keto-friendly ice cream made with just three main ingredients: heavy cream, a keto sweetener, and caramel sauce. This no-churn dessert requires no special equipment and delivers a smooth texture with flaky sea salt.

  • 2 cups (480ml) heavy whipping cream (cold, at least 36% fat)
  • ½ cup (100g) keto-friendly sweetener (e.g., erythritol/monk fruit blend)
  • ½ cup (120ml) keto caramel sauce (room temperature)
  • ½ teaspoon flaky sea salt
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Line a 9×5 inch loaf pan or ice cream container with parchment paper and place it in the freezer to chill.
  2. Pour the cold heavy whipping cream into a large mixing bowl. Whip on medium speed, then increase to high, until stiff peaks form (about 3-5 minutes). Do not over-whip.
  3. Sprinkle the keto sweetener and vanilla extract over the whipped cream. Beat on low speed just until combined.
  4. Pour the room-temperature keto caramel sauce into the cream. Gently fold the caramel in using a spatula with a cutting motion until ribbons of caramel are visible. Avoid over-mixing to maintain airiness.
  5. Sprinkle the flaky sea salt over the mixture and gently fold it in once or twice.
  6. Scrape the mixture into the prepared pan, smooth the top, and cover tightly.
  7. Freeze for at least 6 hours, or ideally overnight, until firm.
  8. Before serving, let the ice cream sit on the counter for 5-10 minutes to soften slightly for easier scooping. Garnish with extra sea salt if desired.

Notes

Ensure all ingredients, especially the cream and bowl, are very cold for best whipping results. Use high-quality keto caramel sauce; if homemade, ensure it is thick and room temperature. If using allulose, the texture will be softer. For a dairy-free version, substitute heavy cream with chilled coconut cream and use coconut-based caramel.
