Description

  • 2 cups (200g) super-fine blanched almond flour
  • ½ cup (115g) unsalted butter, softened to room temperature
  • ½ cup (100g) packed brown sugar
  • ½ cup (100g) granulated white sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (170g) semi-sweet chocolate chips or chopped chocolate
  • Flaky sea salt, for finishing (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream the softened butter, brown sugar, and white sugar together using an electric mixer on medium-high speed for 2-3 minutes until light and fluffy.
  3. Add the egg and vanilla extract to the butter mixture and beat on medium speed until just combined and smooth.
  4. Add the almond flour, baking soda, and salt to the bowl. Mix on low speed or use a spatula just until the dry ingredients disappear. Do not overmix.
  5. Fold in the chocolate chips until evenly distributed throughout the dough.
  6. Scoop dough onto prepared baking sheets, leaving 2 inches between each cookie. For best results, chill the dough in the refrigerator for 30 minutes.
  7. Bake for 10-12 minutes, rotating pans halfway through, until edges are golden brown but centers still look soft.
  8. Let cookies cool on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.
  9. Sprinkle with flaky sea salt immediately after removing from the oven if desired.

Notes

Use super-fine blanched almond flour, not almond meal, to avoid grittiness. Spoon and level the almond flour for accurate measurement. Do not overbake; cookies will firm up as they cool. Dough can be frozen for up to 3 months.
