- 2 cups (200g) super-fine blanched almond flour
- ½ cup (115g) unsalted butter, softened to room temperature
- ½ cup (100g) packed brown sugar
- ½ cup (100g) granulated white sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup (170g) semi-sweet chocolate chips or chopped chocolate
- Flaky sea salt, for finishing (optional)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream the softened butter, brown sugar, and white sugar together using an electric mixer on medium-high speed for 2-3 minutes until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and beat on medium speed until just combined and smooth.
- Add the almond flour, baking soda, and salt to the bowl. Mix on low speed or use a spatula just until the dry ingredients disappear. Do not overmix.
- Fold in the chocolate chips until evenly distributed throughout the dough.
- Scoop dough onto prepared baking sheets, leaving 2 inches between each cookie. For best results, chill the dough in the refrigerator for 30 minutes.
- Bake for 10-12 minutes, rotating pans halfway through, until edges are golden brown but centers still look soft.
- Let cookies cool on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.
- Sprinkle with flaky sea salt immediately after removing from the oven if desired.
Notes
Use super-fine blanched almond flour, not almond meal, to avoid grittiness. Spoon and level the almond flour for accurate measurement. Do not overbake; cookies will firm up as they cool. Dough can be frozen for up to 3 months.
