  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried rosemary
  • Optional: 2 tablespoons grated Parmesan cheese

  • Optional: 1 teaspoon lemon zest

Instructions

  1. Wash potatoes thoroughly; do not peel. If large, cut in half to ensure uniform size. Set aside to dry.
  2. Fill a large pot with water, add 1 tablespoon kosher salt, and bring to a rolling boil.
  3. Add potatoes to boiling water and cook for 15-20 minutes until fork-tender but holding their shape. Drain and let steam dry for 2-3 minutes.
  4. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  5. Place boiled potatoes on the baking sheet and press down firmly with a mug or glass to flatten to about ½ inch thick.
  6. Melt butter in a small saucepan or microwave. Remove from heat and stir in minced garlic, parsley, rosemary, and black pepper.
  7. Drizzle the garlic herb butter generously over the smashed potatoes, ensuring it gets into the cracks.
