Description
A bright, icy, and refreshing watermelon slushie blended with fresh mint and lime. This simple, customizable drink is perfect for hot days and requires only a few ingredients.

- 4–5 cups watermelon, cubed (fresh or frozen)
- 1 cup fresh mint leaves, packed
- 2–3 tablespoons fresh lime juice
- 1–2 cups ice
- 1–2 tablespoons honey or agave syrup (optional)
- A tiny pinch of coarse salt
- Sparkling water (optional, for fizz)
Instructions
- Wash the watermelon, remove the rind, and cut the flesh into chunks. Aim for 4-5 cups. If using fresh watermelon, consider freezing the chunks for an hour for a thicker slushie.
- Wash the fresh mint leaves. Remove woody stems if desired, but tender stems can be blended.
- Add the watermelon chunks, mint leaves, and lime juice to a high-speed blender. If using fresh watermelon, add the ice now.
- Blend on high for 30-60 seconds until the mint is finely chopped and the mixture is smooth. Scrape down the sides if needed.
- Taste the mixture. Add honey or agave if more sweetness is needed, or a pinch of salt and more lime if it tastes bland.
- Blend again for 15-20 seconds to incorporate adjustments. The mixture should be thick and icy. Add a splash of water or sparkling water if too thick.
- Pour into glasses and garnish with a sprig of mint and a lime wedge. Serve immediately.
Notes
For a thicker slushie without dilution, freeze the watermelon chunks beforehand. If you prefer a smoother texture, strain the mixture through a fine-mesh sieve. For an alcoholic version, add 2-3 ounces of vodka or white rum per serving.
