Description

A rich, creamy, and indulgent chocolate mousse made with ripe avocados, cocoa powder, and maple syrup. This plant-based dessert is ready in just 5 minutes of active prep time and offers a guilt-free treat packed with healthy fats.


Ingredients

  • 2 medium ripe avocados (about 400g flesh)
  • 1/2 cup (40g) unsweetened cocoa powder (Dutch-processed preferred)
  • 1/4 to 1/3 cup (60-80ml) pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 24 tablespoons (30-60ml) unsweetened almond milk or oat milk
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons (15g) cacao nibs for topping
  • Optional: Fresh berries (raspberries or strawberries)
  • Optional: Sea salt flakes for topping

Instructions

  1. Cut avocados in half, remove pits, and scoop the bright green flesh into a blender or food processor. Scrape off any brown spots.
  2. Add cocoa powder, maple syrup, vanilla extract, and salt to the blender.
  3. Blend on low speed, gradually increasing to high, for 30-60 seconds. Stop to scrape down the sides with a spatula and blend again until the mixture is completely smooth with no visible chunks.
  4. Check consistency; if too thick, add almond milk one tablespoon at a time, blending after each addition, until desired thickness is reached.
  5. Transfer mousse to serving bowls or a container, cover, and refrigerate for at least 15-30 minutes to chill and firm up.
  6. Before serving, sprinkle cacao nibs, fresh berries, and sea salt flakes over the top.
  7. Serve immediately and enjoy.

Notes

Ensure avocados are perfectly ripe (dark skin, yields to pressure) for a smooth texture. Do not use under-ripe avocados as they will result in a gritty mousse. Chilling is recommended to improve texture and meld flavors. This mousse can be stored in an airtight container in the refrigerator for up to 3 days. Do not freeze as the texture will become grainy.
