Description
A crisp, bubbly, and refreshing non-alcoholic drink made with fresh cucumber, mint, and lime juice. It takes less than 10 minutes to prepare and is naturally low-sugar and hydrating.
Ingredients
- 1 large English cucumber (about 300g), sliced into rounds or ribbons
- 1 large bunch fresh mint (about 1 cup loosely packed)
- ½ cup fresh lime juice (from about 3–4 limes)
- 4 cups plain sparkling water
- 2–3 limes, thinly sliced for garnish
- 1–2 tablespoons honey or simple syrup (optional)
- Ice (large cubes or spheres preferred)
Instructions
- Wash the cucumber and mint thoroughly. Slice the cucumber into thin rounds or ribbons and juice the limes to get ½ cup of fresh juice.
- Place the cucumber slices and mint leaves in the bottom of a large pitcher. Gently muddle them to bruise the leaves and release juices, being careful not to shred the mint.
- Pour the fresh lime juice over the muddled cucumber and mint. Stir gently to combine.
- Fill the pitcher about halfway to two-thirds full with ice.
- Slowly pour the sparkling water over the ice to avoid overflow. Stir gently to mix.
- Taste the drink and adjust by adding more sparkling water, lime juice, or honey as desired.
- Let the mixture sit for 5-10 minutes to allow flavors to meld.
- Pour into glasses over fresh ice. Garnish with a cucumber ribbon and a sprig of mint. Serve immediately.
Notes
Chill ingredients and pitcher beforehand for best results. Do not over-muddle mint to avoid bitterness. Use fresh lime juice only; bottled juice affects flavor. For meal prep, make the base (cucumber, mint, lime) up to 2 days ahead and add sparkling water right before serving. Freeze cucumber slices in ice cube trays to prevent dilution.
