Description

A crisp, bubbly, and refreshing non-alcoholic drink made with fresh cucumber, mint, and lime juice. It takes less than 10 minutes to prepare and is naturally low-sugar and hydrating.


Ingredients

  • 1 large English cucumber (about 300g), sliced into rounds or ribbons
  • 1 large bunch fresh mint (about 1 cup loosely packed)
  • ½ cup fresh lime juice (from about 34 limes)
  • 4 cups plain sparkling water
  • 23 limes, thinly sliced for garnish
  • 12 tablespoons honey or simple syrup (optional)
  • Ice (large cubes or spheres preferred)

Instructions

  1. Wash the cucumber and mint thoroughly. Slice the cucumber into thin rounds or ribbons and juice the limes to get ½ cup of fresh juice.
  2. Place the cucumber slices and mint leaves in the bottom of a large pitcher. Gently muddle them to bruise the leaves and release juices, being careful not to shred the mint.
  3. Pour the fresh lime juice over the muddled cucumber and mint. Stir gently to combine.
  4. Fill the pitcher about halfway to two-thirds full with ice.
  5. Slowly pour the sparkling water over the ice to avoid overflow. Stir gently to mix.
  6. Taste the drink and adjust by adding more sparkling water, lime juice, or honey as desired.
  7. Let the mixture sit for 5-10 minutes to allow flavors to meld.
  8. Pour into glasses over fresh ice. Garnish with a cucumber ribbon and a sprig of mint. Serve immediately.

Notes

Chill ingredients and pitcher beforehand for best results. Do not over-muddle mint to avoid bitterness. Use fresh lime juice only; bottled juice affects flavor. For meal prep, make the base (cucumber, mint, lime) up to 2 days ahead and add sparkling water right before serving. Freeze cucumber slices in ice cube trays to prevent dilution.
