Description

  • 1 cup (120g) yellow cornmeal (medium grind)
  • 1 cup (125g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup (240ml) buttermilk
  • 2 large eggs (room temperature)
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 cup (115g) unsalted butter, softened (for honey butter)
  • 2 tablespoons raw honey
  • Pinch of salt (for honey butter)

Instructions

  1. Preheat oven to 400°F (200°C). Brush a 9×9 inch baking pan with melted butter.
  2. In a medium bowl, whisk together cornmeal, all-purpose flour, baking powder, baking soda, and salt until uniform.
  3. In a separate large bowl, whisk buttermilk, eggs, and melted butter until smooth and glossy.
  4. Pour wet ingredients into dry ingredients. Gently fold with a spatula until just combined; batter should be thick and lumpy. Do not overmix.
  5. Pour batter into prepared pan and smooth the top.
  6. Bake for 20-25 minutes until golden brown, edges pull away from pan, and a toothpick comes out clean.
  7. While cornbread bakes, mix softened butter, honey, and a pinch of salt until smooth and creamy.
  8. Let cornbread cool in pan for 5 minutes before cutting into squares.
  9. Serve warm with a generous dollop of honey butter.

Notes

Do not overmix the batter to ensure a tender crumb. For a crispier crust, preheat a cast-iron skillet in the oven before adding batter. If you don’t have buttermilk, substitute with 1 cup milk plus 1 tablespoon lemon juice or vinegar. Store leftovers in an airtight container at room temperature for up to 2 days.
