Description
A quick, easy, and authentic Southern-style cornbread that is savory, moist, and crumbly. Paired with a sweet and tangy honey butter, this recipe is perfect for busy weeknights and pairs well with BBQ or simple salads.
Ingredients
- 1 cup (120g) yellow cornmeal (medium grind)
- 1 cup (125g) all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 cup (240ml) buttermilk
- 2 large eggs (room temperature)
- 1/2 cup (115g) unsalted butter, melted
- 1/2 cup (115g) unsalted butter, softened (for honey butter)
- 2 tablespoons raw honey
- Pinch of salt (for honey butter)
Instructions
- Preheat oven to 400°F (200°C). Brush a 9×9 inch baking pan with melted butter.
- In a medium bowl, whisk together cornmeal, all-purpose flour, baking powder, baking soda, and salt until uniform.
- In a separate large bowl, whisk buttermilk, eggs, and melted butter until smooth and glossy.
- Pour wet ingredients into dry ingredients. Gently fold with a spatula until just combined; batter should be thick and lumpy. Do not overmix.
- Pour batter into prepared pan and smooth the top.
- Bake for 20-25 minutes until golden brown, edges pull away from pan, and a toothpick comes out clean.
- While cornbread bakes, mix softened butter, honey, and a pinch of salt until smooth and creamy.
- Let cornbread cool in pan for 5 minutes before cutting into squares.
- Serve warm with a generous dollop of honey butter.
Notes
Do not overmix the batter to ensure a tender crumb. For a crispier crust, preheat a cast-iron skillet in the oven before adding batter. If you don’t have buttermilk, substitute with 1 cup milk plus 1 tablespoon lemon juice or vinegar. Store leftovers in an airtight container at room temperature for up to 2 days.
