Description

Save your Labor Day dinner with these quick smoked brisket sandwiches that taste like 12-hour smoked meat but come together in just 15 minutes. Perfect for feeding a crowd without the hassle.

  • 23 lbs pre-smoked brisket (deli style)
  • 1 large yellow onion, diced
  • 2 tbsp butter
  • Brioche buns or potato rolls
  • BBQ sauce (Kansas City style recommended)
  • Optional: Pickles, coleslaw, fried egg, hot sauce, or cayenne pepper

Instructions

  1. Slice the pre-smoked brisket against the grain into thin strips or bite-sized chunks. Dice the onion into small pieces.
  2. Heat a large cast iron skillet or heavy-bottomed pan over medium heat. Add butter and once foaming, add the onions.
  3. Sauté onions for 3-4 minutes until soft and translucent, then push to the side or pile in the center.
  4. Add the chopped brisket to the pan. Let it sit for a minute to get a crispy edge, then toss. Heat through for 3-5 minutes.
  5. Pour BBQ sauce over the meat and onions. Toss to combine and simmer for 2 minutes until the sauce thickens and coats the meat.
  6. While the meat simmers, split the buns and toast them cut-side down in the pan with the meat juices for 30-60 seconds until golden.
  7. Assemble the sandwiches by scooping the meat and onion mixture onto the bottom bun and topping with the top bun. Serve immediately.

Notes

Slice brisket against the grain to ensure tenderness. If the brisket seems dry, add a splash of beef broth or apple cider vinegar to the pan. For a spicy kick, mix in chopped jalapeños or cayenne pepper. Store leftovers in an airtight container in the fridge for up to 4 days. Freeze meat mixture separately from buns for up to 3 months. Reheat gently in a skillet with liquid to restore moisture.
