Description

Ingredients

  • 2 tablespoons (25g) granulated sugar
  • 2 tablespoons (25g) packed brown sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons (22g) all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons (30g) semi-sweet chocolate chips
  • Flaky sea salt (e.g., Maldon) for topping
  • Optional: 1 tablespoon toasted pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 6-inch or 8-inch cast-iron skillet or line the bottom with parchment paper.
  2. Melt the butter in a microwave-safe bowl in 15-second bursts, stirring halfway, until liquid but not browned. Let cool slightly.
  3. Whisk the melted butter, granulated sugar, packed brown sugar, egg yolk, and vanilla extract together until glossy and emulsified.
  4. Add the flour, baking soda, and fine sea salt to the wet mixture. Stir gently with a spatula until just combined; do not overmix.
  5. Fold in the chocolate chips (and nuts if using), reserving a small handful for the top.
  6. Press the dough evenly into the prepared skillet, about 1/2 inch thick. Press the reserved chocolate chips onto the surface.
  7. Bake for 10-12 minutes until edges are golden brown and crisp, but the center still looks soft.
  8. Remove from oven and immediately sprinkle with flaky sea salt.
  9. Let cool in the skillet for 2-3 minutes before eating directly from the pan.

Notes

Do not overbake; the center will continue to cook from residual heat. Use flaky sea salt on top for texture contrast. If using an 8-inch skillet, reduce baking time by 2-3 minutes. For gluten-free, use a 1-to-1 gluten-free flour blend. For vegan, use vegan butter and dairy-free chocolate chips.
