Description
A creamy, tangy, and spicy slow cooker white chicken chili that requires minimal prep time. This hands-off meal is perfect for busy weeknights and tastes even better as leftovers.

- 1.5 pounds boneless, skinless chicken breasts
- 2 cans (15 ounces each) white beans (Cannellini or Great Northern), rinsed and drained
- 1 can (4 ounces) diced green chiles
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon mild chili powder
- 1/2 teaspoon dried oregano
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper (adjust to taste)
- Optional: 1 cup frozen or canned corn
- Optional: 1 can black beans, drained
- Optional: 1 avocado, diced
Instructions
- Chop the onion and mince the garlic. Rinse and drain the white beans.
- Add the chicken breasts to the bottom of a 6-quart slow cooker.
- Top with the diced onion, minced garlic, rinsed beans, and green chiles.
- Pour in the chicken broth. Sprinkle cumin, chili powder, oregano, salt, and pepper over the top. Stir gently to combine.
- Cover and cook on low for 6-8 hours (or high for 3-4 hours).
- Remove the chicken from the pot and shred it into bite-sized pieces using two forks. Return the shredded chicken to the slow cooker.
- Stir in the heavy cream. Let it simmer on low for an additional 15-30 minutes to thicken and meld flavors.
- Taste and adjust salt and pepper if needed. Serve topped with desired garnishes.
Notes
For extra creaminess, mash 1/2 cup of the beans before adding the cream. Sautéing the onion and garlic before adding them to the slow cooker adds depth. If the sauce is too thin, let it simmer uncovered for 30 minutes. If too thick, add a splash of broth. This recipe freezes well for up to 3 months.
