Description

A tender, flavorful chuck roast cooked in a slow cooker with ranch dressing mix, pepperoncini peppers, and butter. This low-effort, high-reward meal is perfect for busy weeknights and meal prep.


Ingredients

  • 3 to 4 pounds chuck roast
  • 1 packet (about 1 ounce) dry ranch dressing mix
  • 1 jar (12 to 14 ounces) pepperoncini peppers and brine
  • 2 to 3 tablespoons salted butter
  • ½ cup low-sodium beef broth
  • Optional: Chopped carrots and baby potatoes
  • Optional: 1 teaspoon garlic powder

Instructions

  1. Trim any large chunks of hard fat from the chuck roast, leaving some marbling for moisture.
  2. Place the roast in a 6-quart slow cooker.
  3. Sprinkle the entire packet of ranch dressing mix over the top of the roast.
  4. Pour the beef broth around the roast.
  5. Drain most of the pepperoncini brine into the slow cooker, reserving a little if desired for extra tang.
  6. Add the pepperoncini peppers and their juice over the roast.
  7. Dot the top of the roast with the butter.
  8. Cover and cook on Low for 8 hours or on High for 5 hours until the meat is fork-tender.
  9. Remove the roast from the slow cooker and shred it using two forks or a meat shredder tool.
  10. For a thicker sauce, simmer the liquid in a saucepan or mix a cornstarch slurry (1 tbsp cornstarch + 1 tbsp cold water) into the slow cooker liquid and cook on High for 10 minutes.
  11. Return the shredded meat to the slow cooker, pour the sauce over it, and stir to combine.
  12. Serve hot with mashed potatoes, rice, or crusty bread.

Notes

Do not skip the butter as it adds richness and helps the ranch mix dissolve. Cook on Low for the best texture. If the sauce is too thin, use a cornstarch slurry or simmer on the stove. Use low-sodium broth to control saltiness, as the ranch mix and brine are salty. Leftovers freeze well for up to 3 months.
