  • 1/4 cup honey

  • 1 tablespoon vegetable oil
  • 1 teaspoon freshly ground black pepper
  • 2 cups broccoli florets
  • 1 large red bell pepper, chopped
  • 1 medium red onion, cut into wedges
  • 1 tablespoon sesame seeds (optional, for garnish)
  • 2 tablespoons fresh parsley or green onions, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large 18×13 inch rimmed baking sheet with aluminum foil and spray with non-stick cooking spray.
  2. In a small bowl, whisk together yellow mustard, honey, soy sauce, minced garlic, vegetable oil, and black pepper until smooth.
  3. Pat chicken thighs dry with paper towels and place them in a large mixing bowl. Add broccoli florets, chopped bell peppers, and onion wedges to the same bowl.
  4. Pour about half of the honey mustard glaze over the chicken and vegetables. Toss thoroughly to coat everything evenly. Reserve the remaining glaze.
  5. Arrange the chicken and vegetables in a single layer on the prepared sheet pan, ensuring pieces are not touching to allow for proper roasting.
  6. Roast for 20 minutes. Remove pan, flip the chicken, and toss the vegetables. Brush the reserved glaze over the chicken and veggies.
  7. Return to oven and roast for another 10-15 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender and charred.
  8. Remove from oven and let rest for 5 minutes. Sprinkle with sesame seeds and fresh herbs if desired. Serve immediately.
