Description

A quick, flavorful 30-minute weeknight dinner featuring roasted shrimp, spicy andouille sausage, and bell peppers on a single sheet pan for easy cleanup.


Ingredients

  • 1 pound andouille sausage, sliced into thick rounds
  • 1.5 pounds large shrimp, peeled, deveined, and patted dry
  • 3 large bell peppers (mixed colors), chopped into 1-inch chunks
  • 1 large yellow onion, cut into wedges
  • 2 tablespoons Cajun seasoning
  • 3 tablespoons unsalted butter, melted or very soft
  • 4 cloves garlic, minced
  • 4 stalks green onions, chopped (for garnish)
  • Optional: 2 stalks celery, diced
  • Optional: 1 cup okra, sliced

Instructions

  1. Preheat oven to 425°F (220°C). Line a large half-sheet baking pan with parchment paper or a silicone mat.
  2. Chop bell peppers into 1-inch chunks and cut yellow onion into wedges. Slice andouille sausage into ½-inch thick rounds.
  3. In a large mixing bowl, combine bell peppers, onions, sausage, butter, Cajun seasoning, and minced garlic. Toss until evenly coated.
  4. Spread the vegetable and sausage mixture onto the prepared sheet pan in a single layer. Do not crowd the pan.
  5. Roast in the preheated oven for 10 minutes to allow sausage to render fat and veggies to soften.
  6. Remove pan from oven. Scatter dried shrimp evenly over the top. Drizzle any remaining seasoning/butter over shrimp.
  7. Return to oven and roast for 7-8 minutes until shrimp are pink, opaque, and curled into a ‘C’ shape.
  8. Remove from oven and sprinkle with chopped green onions. Serve immediately.

Notes

Pat shrimp dry thoroughly to ensure roasting instead of steaming. Do not crowd the pan; use two pans if necessary for proper browning. Shrimp cook quickly, so add them in the last 7-8 minutes to avoid rubbery texture. Serve over white rice or with cornbread.
