Description
A quick, 20-minute dessert featuring a gooey, golden-brown cookie baked in a cast-iron skillet with pockets of melted caramel and flaky sea salt.

- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 12–15 soft caramel candies, unwrapped and halved
- Flaky sea salt, for topping
- Vanilla ice cream, for serving (optional)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease an 8-inch cast iron skillet if needed.
- In a medium mixing bowl, whisk melted butter, granulated sugar, and brown sugar until smooth and glossy.
- Add the egg and vanilla extract, whisking until fully combined.
- Add flour, baking soda, and salt. Stir gently with a spatula until just combined; do not overmix.
- Fold in chocolate chips and chopped caramel candies, reserving a few for the top.
- Press dough evenly into the prepared skillet.
- Bake for 15-18 minutes until edges are golden brown but center remains soft.
- Remove from oven and immediately sprinkle with flaky sea salt.
- Let cool in the skillet for 5 minutes before serving.
Notes
For best results, use room temperature eggs to prevent seizing the butter. Do not overbake; the center should look slightly soft as it will firm up while cooling. If using salted butter, reduce added salt by half. Can be made gluten-free using a 1:1 gluten-free flour blend.
