  • 1 ½ cups (350ml) strong espresso or coffee, cooled completely
  • 23 tablespoons Marsala wine or coffee liqueur (optional)
  • 16 oz (450g) mascarpone cheese, room temperature
  • 6 large egg yolks
  • ½ cup (100g) granulated white sugar
  • 1 cup (240ml) heavy whipping cream, cold
  • 1 teaspoon vanilla extract
  • 2430 Savoiardi ladyfingers
  • Unsweetened cocoa powder, for dusting
  • Dark chocolate shavings (optional)

Instructions

  1. Brew strong espresso or coffee and stir in liqueur if using. Pour into a shallow bowl and let cool completely to room temperature.
  2. In a large bowl, whisk egg yolks and sugar together using an electric mixer on medium-high speed for 3-4 minutes until pale, thick, and fluffy.
  3. Reduce mixer speed to low and add mascarpone cheese. Beat just until combined and smooth, being careful not to overmix.
  4. In a separate cold bowl, whip heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the mascarpone mixture using a rubber spatula until no white streaks remain.
  6. Quickly dip each ladyfinger into the cooled coffee for 1-2 seconds per side to soak but not saturate. Place them in a 9×13 inch dish.
  7. Spread half of the cream mixture over the first layer of ladyfingers. Add a second layer of dipped ladyfingers and top with remaining cream.
  8. Cover with plastic wrap and refrigerate for at least 4 hours, ideally overnight, to allow flavors to meld and texture to set.
  9. Before serving, sift a generous layer of cocoa powder over the top. Add chocolate shavings if desired.

Notes

Ensure the coffee is completely cool before dipping to prevent ladyfingers from dissolving. Keep heavy cream and mixing bowl cold for best whipping results. For food safety, use pasteurized eggs or omit egg yolks for an eggless version. Do not freeze, as texture will suffer.
