  • 3 slices thick-cut bacon
  • 3 tbsp apple cider vinegar
  • 1/2 cup vegetable broth
  • 1/4 medium yellow onion, chopped
  • 1 tsp mustard (yellow or Dijon)
  • 1/2 tsp caraway seeds
  • 1 tsp sugar
  • 1 tbsp fresh parsley, chopped
  • Salt for boiling water

Instructions

  1. Wash and cut red potatoes into 1-inch chunks. Place in a saucepan, cover with cold water by an inch, and add a generous pinch of salt.
  2. Bring water to a rolling boil, then reduce heat to medium-high. Simmer for 12-15 minutes until potatoes are tender but hold their shape. Drain and let steam dry for a minute.
  3. While potatoes boil, cook bacon in a small skillet over medium heat until crispy (4-5 minutes). Remove bacon to a paper towel, leaving the grease in the pan.
  4. Reduce heat to low. Sauté chopped onion in the bacon grease for 2-3 minutes until soft. Add apple cider vinegar, vegetable broth, mustard, sugar, and caraway seeds. Simmer gently for 1 minute.
  5. Transfer drained potatoes to a mixing bowl. Pour the hot dressing over the potatoes immediately and toss to coat.
  6. Crumble the crispy bacon and sprinkle over the salad. Add fresh parsley. Taste and adjust seasoning if needed. Serve warm.

Notes

Use red or Yukon Gold potatoes to prevent mushiness. Serve warm so the potatoes absorb the dressing. If skipping bacon, use butter or oil and add smoked paprika for flavor. Leftovers keep well in the fridge for up to 3 days.
