Description
A comforting, low-effort German-inspired dish where bratwurst are braised in beer with sweet, caramelized onions. This method avoids grilling stress while delivering rich, deep flavors.

- 6 links bratwurst (approx. 1.5 lbs / 680g)
- 1 bottle (12 oz / 355 ml) German Pilsner or Helles Lager
- 3 large yellow onions, thinly sliced (approx. 4 cups)
- 3 tbsp unsalted butter
- 2 tbsp whole grain mustard
- 2 dried bay leaves
Instructions
- Pat bratwurst dry with paper towels. Heat 2 tablespoons of butter in a heavy-bottomed Dutch oven over medium-high heat. Sear brats on all sides for 2-3 minutes until browned, then remove to a plate.
- Reduce heat to medium. Add remaining 1 tablespoon of butter if needed. Add sliced onions and a pinch of salt. Cook for 20-25 minutes, stirring occasionally, until deep golden brown and soft.
- Push onions to the sides to create a well. Add mustard and stir into onion juices for 1 minute. Pour in the beer, scraping the bottom of the pot to release browned bits. Add bay leaves and bring to a gentle simmer.
- Nestle seared brats back into the pot, partially burying them in the onion-beer mixture. Cover with a tight-fitting lid, reduce heat to low, and simmer gently for 45 minutes.
- Remove lid. Check that brats are cooked through (internal temp 160°F / 71°C). If sauce is too thin, simmer uncovered for 5-10 minutes to reduce. Discard bay leaves and serve immediately with onions and sauce.
Notes
Do not pierce the sausages with a fork, as this releases juices and leads to dry meat. Use a beer you enjoy drinking, as the flavor concentrates during cooking. For a gluten-free option, ensure brats and mustard are certified gluten-free. Leftovers freeze well for up to 3 months.
