  • 23 tablespoons granulated sugar
  • 2 cups heavy whipping cream (cold)
  • 1 teaspoon vanilla extract
  • 23 tablespoons powdered sugar
  • 1 sleeve graham crackers, crushed into crumbs
  • Fresh mint leaves (optional, for garnish)
  • White chocolate chips (optional)
  • Lime zest (optional)

Instructions

  1. Wash the watermelon, cut off the top and bottom, and slice off the rind. Cut the flesh into 1-inch cubes.
  2. Toss the watermelon cubes with granulated sugar and let them sit for 10 minutes to draw out juice.
  3. Drain excess liquid and pat the watermelon cubes dry thoroughly with paper towels.
  4. Crush the graham crackers into fine crumbs using a food processor or a rolling pin in a ziplock bag. Reserve ½ cup for garnish.
  5. In a cold bowl, whip the heavy cream, vanilla extract, and powdered sugar until stiff peaks form.
  6. Spread a thin layer of whipped cream on a large platter or cake stand.
  7. Arrange a layer of watermelon cubes in a tight circular pattern on the cream.
  8. Spread a generous layer of whipped cream over the watermelon, then sprinkle with graham cracker crumbs.
  9. Repeat the layers (watermelon, cream, crumbs) 2-3 times, ending with a final layer of watermelon topped with thick whipped cream.
  10. Press the reserved graham cracker crumbs onto the sides of the cake to mimic the rind.
  11. Garnish with mint leaves and remaining crumbs if desired.
  12. Refrigerate for at least 30 minutes to set before serving.

Notes

Ensure watermelon cubes are patted completely dry to prevent the cake from becoming soggy or sliding apart. Use cold cream and bowls for whipping to ensure stiff peaks. The cake is best served chilled and should be consumed within 24 hours for optimal texture. Do not freeze as the watermelon will become mushy.
