Labor Day No-Bake Peanut Butter Icebox Pie

  • Author: Rebecca
  • Total Time: 4 hours 20 minutes
  • Yield: 12 servings 1x

Description

An easy, no-bake 5-ingredient dessert featuring creamy peanut butter and cream cheese filling layered with crunchy graham crackers and topped with a chocolate drizzle. Perfect for summer cookouts and make-ahead entertaining.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1 cup creamy peanut butter
  • 2 cups heavy cream, cold
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 box graham crackers (about 2024 squares)
  • ½ cup semi-sweet chocolate chips
  • 1 tablespoon peanut butter (for drizzle)
  • Optional: Crushed peanuts, mini chocolate chips, or sea salt for topping

Instructions

  1. Lightly grease a 9×13 inch baking dish with butter or cooking spray.
  2. Separate graham crackers into whole squares and broken pieces. Reserve 8-10 whole squares for the bottom layer.
  3. In a large bowl, beat softened cream cheese and powdered sugar until smooth. Add peanut butter and vanilla; beat until combined and creamy.
  4. In a separate cold bowl, whip heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture using a spatula to maintain airiness.
  6. Layer the pie: Place whole graham crackers at the bottom, spread half the filling, sprinkle broken cracker pieces, repeat with remaining crackers, filling, and broken pieces on top. Press down gently.
  7. Cover with plastic wrap and refrigerate for at least 4 hours or overnight until set.
  8. Melt chocolate chips and 1 tablespoon peanut butter in the microwave in 30-second intervals, stirring until smooth.
  9. Drizzle the chocolate mixture over the chilled pie.
  10. Slice with a sharp knife and serve chilled.

Notes

Ensure cream cheese is softened to room temperature to avoid lumps. Keep heavy cream very cold for best whipping results. Do not skip the chilling time as it allows the crackers to soften and bind the layers. For clean cuts, dip the knife in hot water and wipe dry between slices.
