Ingredients
- 8 ounces (225g) full-fat block cream cheese, softened
- 2 cups (300g) rotisserie chicken, shredded
- ½ cup (120ml) Frank’s RedHot Original Cayenne Pepper Sauce
- 1 cup (100g) sharp cheddar cheese, shredded from a block
- ½ cup (60g) blue cheese crumbles
- ¼ cup (60ml) ranch dressing
- 3 stalks green onions, sliced
- Celery sticks and carrot sticks for serving
- Sturdy chips (tortilla, potato, or pita) for serving
Instructions
- Prep ingredients: Shred the rotisserie chicken, shred the cheddar cheese, slice the green onions, and let the cream cheese sit out to soften.
- In a large skillet over medium-low heat, add the softened cream cheese. Stir gently with a wooden spoon or silicone spatula until it breaks down and becomes smooth.
- Pour in the buffalo sauce and ranch dressing. Stir constantly until the mixture forms a smooth, orange-colored sauce. Adjust consistency with a splash of milk or more cream cheese if needed.
- Add the shredded chicken and cheddar cheese to the pan. Stir gently to combine, ensuring the chicken is coated and the cheese melts. Keep heat on low-medium to prevent separation.
- Stir in the blue cheese crumbles and sliced green onions. Taste and adjust seasoning with more hot sauce or ranch if desired.

Notes
Use block cream cheese and block cheddar cheese rather than pre-shredded or tub varieties to avoid grainy texture and lumps. Soften the cream cheese completely before cooking. If the dip is too thick, add a splash of milk or ranch. If too thin, cook longer on low heat or add more cheese. This dip does not freeze well due to the dairy content.
