These honey mustard chicken skewers are a stress-free, flavorful grilling solution perfect for summer gatherings. With a sticky, tangy-sweet glaze and simple prep, they deliver restaurant-quality taste with minimal effort.
Ingredients
- 2 pounds boneless, skinless chicken breasts, cut into 1.5-inch cubes
- ½ cup honey
- ¼ cup Dijon mustard
- 2 tablespoons whole grain mustard
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Kosher salt
- Freshly cracked black pepper
- Bell peppers (red and yellow), chopped into chunks
- Red onion, chopped into chunks
- Pineapple chunks (optional)
Instructions
- In a large bowl, whisk together honey, Dijon mustard, whole grain mustard, olive oil, minced garlic, salt, and pepper until smooth and emulsified.
- Place chicken cubes in a large zip-top bag or shallow dish. Pour half of the marinade over the chicken and toss to coat. Reserve the remaining half for basting.
- Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours.
- While chicken marinates, chop bell peppers and red onion into chunks similar in size to the chicken. If using pineapple, cut into chunks.
- If using wooden skewers, soak them in water for at least 30 minutes. Thread chicken and vegetables onto skewers, alternating pieces and leaving space for heat circulation.
- Preheat grill to medium-high heat (approx. 400°F). Clean and oil the grates lightly.
- Place skewers on the grill. Cook for 3-4 minutes per side, turning every 3 minutes. Baste with reserved marinade after the first flip.
- Cook until chicken reaches an internal temperature of 165°F and the honey is caramelized with slight charring at the edges.
- Transfer skewers to a plate and let rest for 5 minutes before serving.
Notes
If using wooden skewers, soaking them for 30 minutes prevents burning. Always reserve half the marinade before adding it to raw chicken to use as a basting/serving sauce. Do not use the raw marinade as a dip unless boiled first. Honey burns easily, so monitor heat closely and move skewers to a cooler part of the grill if charring occurs too quickly. Chicken thighs can be used instead of breasts for juicier results, but may require slightly longer cooking time.
