Ingredients
- 2 pounds pork tenderloin (preferably two smaller ones)
- ½ cup honey
- ¼ cup soy sauce (or tamari for gluten-free)
- 6 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon freshly cracked black pepper
- 1 pound carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- Salt, to taste
- Optional: Fresh parsley or chives, chopped
- Optional: Sesame seeds
Instructions
- Preheat oven to 400°F (200°C).
- Trim the silverskin off the pork tenderloin and pat dry. Season generously with salt and pepper.
- Peel carrots and cut into ½-inch thick sticks. Toss with olive oil, salt, and pepper. Spread on a rimmed baking sheet.
- Roast carrots for 10 minutes.
- While carrots roast, warm honey, soy sauce, minced garlic, apple cider vinegar, and garlic powder in a small saucepan or microwave until fluid. Do not boil.
- Remove pan from oven. Place pork tenderloin(s) on the pan among the carrots. Brush generously with half of the glaze.
- Return to oven and roast for 15-20 minutes.
- Halfway through roasting (around 10 minutes), remove pan and brush pork with remaining glaze.
- Check internal temperature with an instant-read thermometer; it should reach 145°F (63°C).
- Remove pork from oven and let rest on a cutting board, tented with foil, for 5-10 minutes.
- Slice pork into medallions and serve over roasted carrots, drizzling with pan juices. Garnish with parsley or sesame seeds if desired.
Notes
Trimming the silverskin is crucial to prevent the pork from curling. Do not overcook the pork; pull it at 145°F as it will continue to cook slightly while resting. Honey burns easily, so keep an eye on the glaze and lower oven temperature to 375°F if it browns too quickly. For a spicy variation, add sriracha to the glaze.
