Description
A convenient and flavorful meal prep solution featuring roasted chicken breasts tossed in a classic buffalo sauce, served over crisp romaine lettuce with a creamy Greek yogurt dressing. This high-protein dish is designed to stay fresh for up to four days.

- 4 large boneless, skinless chicken breasts (approx. 600g)
- 1/2 cup Frank’s RedHot Sauce
- 4 tbsp unsalted butter
- 1 cup plain 2% Greek yogurt
- 2 large heads romaine lettuce
- 1 pint cherry tomatoes
- 1/2 cup blue cheese crumbles
- 3 medium carrots
- Salt and black pepper
- 1 tsp garlic powder
- 1 tbsp lemon juice
Instructions
- Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- Pat chicken breasts dry and season generously with salt, pepper, and garlic powder. Place on the sheet pan.
- In a medium saucepan over medium-low heat, melt butter with Frank’s RedHot Sauce until smooth and emulsified. Do not boil.
- Bake chicken for 15 minutes. Remove from oven, pour buffalo sauce over chicken to coat, and return to oven for 5-10 minutes until internal temperature reaches 165°F (74°C).
- Let chicken rest for 5 minutes before chopping into bite-sized pieces.
- In a mixing bowl, whisk Greek yogurt, lemon juice, garlic powder, salt, and pepper to make the dressing.
- Chop romaine lettuce, halve cherry tomatoes, and shred carrots.
- Toss lettuce, carrots, and tomatoes with half of the dressing.
- Divide dressed salad among four containers. Top with buffalo chicken and blue cheese crumbles.
- Store remaining dressing separately in small containers or dividers.
Notes
Store dressing separately to keep lettuce crisp. Chicken can be frozen for up to 3 months, but do not freeze the assembled salad with greens. If chicken is dry, ensure it doesn’t exceed 160°F before resting, as residual heat will bring it to 165°F.
