Description

A convenient and flavorful meal prep solution featuring roasted chicken breasts tossed in a classic buffalo sauce, served over crisp romaine lettuce with a creamy Greek yogurt dressing. This high-protein dish is designed to stay fresh for up to four days.

  • 4 large boneless, skinless chicken breasts (approx. 600g)
  • 1/2 cup Frank’s RedHot Sauce
  • 4 tbsp unsalted butter
  • 1 cup plain 2% Greek yogurt
  • 2 large heads romaine lettuce
  • 1 pint cherry tomatoes
  • 1/2 cup blue cheese crumbles
  • 3 medium carrots
  • Salt and black pepper
  • 1 tsp garlic powder
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
  2. Pat chicken breasts dry and season generously with salt, pepper, and garlic powder. Place on the sheet pan.
  3. In a medium saucepan over medium-low heat, melt butter with Frank’s RedHot Sauce until smooth and emulsified. Do not boil.
  4. Bake chicken for 15 minutes. Remove from oven, pour buffalo sauce over chicken to coat, and return to oven for 5-10 minutes until internal temperature reaches 165°F (74°C).
  5. Let chicken rest for 5 minutes before chopping into bite-sized pieces.
  6. In a mixing bowl, whisk Greek yogurt, lemon juice, garlic powder, salt, and pepper to make the dressing.
  7. Chop romaine lettuce, halve cherry tomatoes, and shred carrots.
  8. Toss lettuce, carrots, and tomatoes with half of the dressing.
  9. Divide dressed salad among four containers. Top with buffalo chicken and blue cheese crumbles.
  10. Store remaining dressing separately in small containers or dividers.

Notes

Store dressing separately to keep lettuce crisp. Chicken can be frozen for up to 3 months, but do not freeze the assembled salad with greens. If chicken is dry, ensure it doesn’t exceed 160°F before resting, as residual heat will bring it to 165°F.
