  • 2 medium sweet potatoes (approx. 1.5 lbs / 680g), peeled and diced into 1/2-inch cubes
  • 1.5 lbs (680g) ground turkey (93% or 99% lean)
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 large red bell pepper, diced
  • 1 medium yellow onion, diced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 cup (120ml) chicken broth (low-sodium recommended)
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil (divided)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast for 20 minutes until tender but firm.
  3. While potatoes roast, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground turkey and cook for 6-8 minutes, breaking it up, until browned.
  4. Add diced onion and bell pepper to the skillet during the last 3 minutes of cooking the turkey.
  5. Stir in chili powder, cumin, garlic powder, and smoked paprika, coating the meat and vegetables.
  6. Add the roasted sweet potatoes, drained black beans, and chicken broth to the skillet. Stir to combine.
  7. Simmer for 3-4 minutes until the broth reduces slightly and coats the ingredients. Taste and adjust seasoning.
  8. Remove from heat and stir in fresh lime juice.
  9. Let the mixture cool for 10-15 minutes to prevent condensation in storage containers.
  10. Divide evenly into 4 or 5 glass meal prep containers. Store in the refrigerator for up to 4 days or freeze for up to 3 months.

Notes

Do not overcook the sweet potatoes; they should retain a slight bite to prevent mushiness after reheating. If using 93% lean turkey, drain excess fat after browning. For best texture, add fresh toppings like avocado and cilantro just before eating. The dish freezes well for up to 3 months.
