Description

A festive and elegant summer appetizer featuring smoky grilled peaches, salty prosciutto, creamy cheese, and fresh basil, perfect for Labor Day parties or casual gatherings.


Ingredients

  • 46 large firm-ripe yellow peaches
  • 810 ounces prosciutto di Parma
  • 8 ounces soft cheese (Brie, Camembert, or goat cheese)
  • 12 boxes crackers (water crackers, almond crackers) or toasted baguette slices
  • 1 bunch fresh basil
  • 23 tablespoons balsamic glaze
  • Olive oil or melted butter (for grilling)
  • Optional: Honeycomb, fresh grapes, figs, toasted walnuts or pecans, hot honey

Instructions

  1. Wash peaches, pat dry, cut in half, remove pits, and slice into 1/2-inch thick wedges.
  2. Preheat grill to medium-high heat. Brush peach slices lightly with olive oil or melted butter.
  3. Place peaches cut-side down on the grill. Char for 2-3 minutes without moving, then flip and grill for another 1-2 minutes until tender with grill marks. Remove and let cool slightly.
  4. Prepare cheese by cutting wheels into wedges or leaving whole. Arrange prosciutto on a plate, folding or rolling slices loosely for volume.
  5. Assemble the board by placing cheese in the center or at one end.
  6. Arrange grilled peaches around the cheese, overlapping slightly.
  7. Tuck prosciutto around the peaches and cheese, folding into rosettes or draping loosely.
  8. Add crackers and bread in empty spaces, leaning them for height.
  9. Scatter fresh basil leaves generously over the board.
  10. Fill gaps with optional add-ins like grapes, figs, or nuts.
  11. Drizzle with balsamic glaze and add honeycomb if using.
  12. Serve immediately while peaches are still warm.

Notes

Let cheese come to room temperature 30 minutes before serving for best flavor. Do not assemble the board too early as peaches will brown and crackers will get soggy. Assemble 10-15 minutes before guests arrive. If serving outdoors, keep the board in the shade to prevent cheese from melting.
