Description

  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice

  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup cold unsalted butter, cubed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat grill to medium-high heat (375-400°F / 190-200°C). If using charcoal, set up for indirect heat. Lightly grease a 10-inch cast iron skillet.
  2. If using fresh peaches, peel, pit, and slice into 1/2-inch wedges. If using frozen, chop while still cold. In a large bowl, toss peaches with granulated sugar, lemon juice, 1 teaspoon cinnamon, and melted butter. Let sit for 10 minutes.
  3. In a separate bowl, whisk together flour, brown sugar, nuts, 1 teaspoon cinnamon, and salt. Add cold cubed butter and cut in with a fork or pastry cutter until the mixture resembles coarse crumbs with pea-sized chunks.
  4. Pour the peach mixture into the greased skillet and spread evenly. Sprinkle the streusel topping generously over the peaches.
  5. Place the skillet on the grill grates. Cover tightly with heavy-duty foil to seal in steam. Grill for 20-25 minutes without opening the lid.
  6. After 20 minutes, carefully remove the foil. Check if peaches are tender. If the topping isn’t golden, grill uncovered for 5 more minutes to crisp up.
  7. Remove from grill and let cool for 5-10 minutes to allow juices to thicken. Serve warm with vanilla ice cream or whipped cream.

Notes

For the best texture, ensure the butter for the streusel is very cold. Letting the peaches sit with sugar before grilling helps release juices for a syrup. If using fresh peaches, a mix of yellow and white varieties provides the best flavor balance. The cobbler tastes even better the next day as the juices thicken.
