Grilled Peach Burrata Salad: 15-Min Dinner

Description

This grilled peach burrata salad comes together in 15 minutes. Juicy peaches, creamy cheese, and a simple balsamic glaze make it the perfect summer dinner.


Ingredients

  • 23 large ripe peaches
  • 1 ball (7-8 oz) burrata cheese
  • 1/4 cup fresh basil, torn
  • 23 tbsp balsamic glaze
  • 23 slices prosciutto (optional)
  • Pinch crushed red pepper flakes
  • 1 tbsp extra virgin olive oil
  • Sea salt and black pepper to taste

Instructions

  1. Wash peaches and slice into halves, removing pits. Cut each half into 2-3 wedges about 1/2 inch thick.
  2. Place a grill pan or cast iron skillet over medium-high heat for 2-3 minutes until smoking slightly.
  3. Brush peach wedges lightly with olive oil and sprinkle with a pinch of salt.
  4. Place peach wedges cut-side down on the hot pan. Grill for 2-3 minutes until char marks appear and they release easily.
  5. Flip peaches carefully and grill for another 1-2 minutes on the other side. Remove from heat and set aside.
  6. Tear burrata ball into large chunks and place on a serving platter.
  7. Arrange grilled peaches around the cheese.
  8. Scatter torn fresh basil leaves over the salad.
  9. If using, tear prosciutto into strips and add to the salad.
  10. Drizzle balsamic glaze generously over the peaches and cheese.
  11. Finish with a crack of black pepper and a pinch of red pepper flakes. Serve immediately.

Notes

Use ripe peaches that yield slightly to pressure for best caramelization. Let burrata come to room temperature before serving for better texture. Do not freeze this dish as burrata loses its creamy texture. If prosciutto is omitted, the dish is vegetarian.
