A quick and easy weeknight meal featuring firm white fish seasoned with smoked paprika and cumin, grilled to perfection and served with a fresh lime-cilantro slaw in warm corn tortillas.

- 1.5 lbs (680g) firm white fish fillets (Mahi-Mahi, Cod, or Snapper)
- 2 tbsp (30ml) olive oil
- 1 tsp (5g) smoked paprika
- 1/2 tsp (2.5g) garlic powder
- 1/2 tsp (2.5g) cumin
- 1/2 tsp (3g) kosher salt
- 1/2 tsp black pepper
- 2 cups (100g) shredded cabbage (green and purple mix)
- 2 tbsp (30ml) fresh lime juice
- 1/4 cup (15g) fresh cilantro, chopped
- 12 small corn tortillas
Instructions
- Preheat grill to medium-high heat (approx. 400°F/200°C). Create a two-zone fire if possible.
- Pat fish fillets completely dry with paper towels.
- Mix smoked paprika, garlic powder, cumin, salt, and pepper in a small bowl.
- Brush both sides of fish fillets with olive oil and sprinkle evenly with the spice mix, pressing gently to adhere.
- In a separate bowl, toss shredded cabbage, lime juice, chopped cilantro, and a pinch of salt. Set aside.
- Clean and oil grill grates thoroughly to prevent sticking.
- Place fish on the grill at a 45-degree angle. Do not touch for 4 minutes to allow searing.
- Flip fish and cook for another 3-4 minutes until opaque and flaking easily with a fork (internal temp 145°F/63°C).
- Warm corn tortillas directly on grill grates for 30 seconds per side.
- Assemble tacos with tortilla, slaw, grilled fish, and a squeeze of fresh lime. Serve immediately.
Notes
Ensure fish is patted dry before seasoning to prevent steaming. Do not move fish for the first 4 minutes to ensure it releases easily from the grates. Fish continues to cook after removal from heat, so pull at 140°F (60°C) for carry-over cooking.
