Description

A tender, melt-in-your-mouth beef and broccoli dish with a sticky garlic sauce, pressure-cooked to perfection in under 30 minutes for a quick, restaurant-quality weeknight meal.


Ingredients

  • 1.5 lbs flank steak, sliced against the grain into thin strips
  • 1 tbsp vegetable oil (or avocado oil)
  • 1 tbsp soy sauce (for marinade)
  • 1 tsp cornstarch (for marinade)
  • 6 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup chicken broth (low sodium)
  • 1 tbsp dark brown sugar
  • 1 tsp rice vinegar
  • 1 tbsp soy sauce (for sauce)
  • 2 tsp cornstarch mixed with 2 tbsp cold water (slurry)
  • 3 cups broccoli florets

Instructions

  1. Pat flank steak dry and slice against the grain. Toss with 1 tbsp soy sauce and 1 tsp cornstarch. Let sit while prepping vegetables.
  2. Set Instant Pot to ‘Sauté’ on High. Add oil. Sear half the beef in a single layer for 2-3 minutes per side until browned. Transfer to a plate. Repeat with remaining beef.
  3. Remove beef. Add 1/4 cup water to the pot and scrape up brown bits. Return beef to pot. Set valve to ‘Sealing’ and cook on High Pressure for 0 minutes.
  4. Perform a Quick Release. Open lid, add broccoli florets, stir into liquid. Close lid (valve to ‘Sealing’) and cook on High Pressure for 1 minute. Quick release immediately.
  5. Set pot to ‘Sauté’ on Low. In a bowl, mix garlic, ginger, broth, brown sugar, rice vinegar, and 1 tbsp soy sauce. Pour into pot.
  6. Slowly drizzle cornstarch slurry into the pot while stirring constantly. Cook for 1-2 minutes until sauce thickens and coats the back of a spoon.

Notes

Slice beef against the grain for tenderness. Do not overcrowd the pot when searing. Ensure cornstarch is mixed with cold water to prevent clumping. Broccoli should be added at the end to maintain crunch. Sauce thickens further upon cooling; add water when reheating.
