Instructions
- Preheat oven to 425°F (220°C).
- Wash potatoes thoroughly and pat dry. Cut into 1-inch cubes and place in a large mixing bowl.
- Add olive oil, minced garlic, rosemary, thyme, sea salt, and black pepper to the bowl. Toss until potatoes are evenly coated.
- Line a large baking sheet with parchment paper. Spread potatoes in a single layer, ensuring they are not crowded.
- Roast for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Remove from oven and immediately sprinkle with grated Parmesan cheese and lemon zest.
- Return to oven for 1-2 minutes to melt the cheese.
- Remove from oven, sprinkle with fresh parsley, and serve immediately.
Notes
Do not crowd the baking sheet; potatoes need space to crisp up. Use fresh herbs for best flavor. Grate your own Parmesan to avoid anti-caking agents. Pat potatoes dry before roasting to ensure crispiness. For extra crispiness, let them sit on the sheet for 2 minutes after removing from the oven.
