Description

A quick, restaurant-quality garlic butter shrimp scampi made in one skillet in under 15 minutes. This recipe features juicy shrimp, a rich white wine and lemon sauce, and fresh parsley, offering a better alternative to takeout.


Ingredients

  • 1 pound jumbo or extra-large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 68 cloves garlic, minced
  • 1/2 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • 1 large lemon (zest and juice)
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup fresh flat-leaf parsley, chopped
  • Salt and black pepper to taste
  • Crusty bread or pasta (such as linguine) for serving

Instructions

  1. Thaw frozen shrimp in cold water if necessary, then peel, devein, and pat them completely dry with paper towels.
  2. Mince the garlic, chop the parsley, and zest and juice the lemon.
  3. Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer, season with salt and pepper, and cook for 1-2 minutes per side until pink and opaque. Remove shrimp from pan and set aside.
  4. Reduce heat to medium. Add butter to the same pan. Once melted and foaming, add garlic and red pepper flakes. Stir constantly for 30-60 seconds until fragrant but not brown.
  5. Pour in white wine and lemon juice, scraping up browned bits from the bottom of the pan. Simmer for 1-2 minutes until the sauce reduces slightly.
  6. Return shrimp to the pan and toss in the sauce for 30 seconds to warm through. Remove from heat.
  7. Stir in fresh parsley and half of the lemon zest. Taste and adjust seasoning with salt, pepper, or more lemon juice.
  8. Serve immediately over cooked pasta or with crusty bread, topped with remaining parsley and lemon zest.

Notes

Pat shrimp dry thoroughly to ensure they sear rather than steam. Do not overcook shrimp or they will become rubbery. If serving with pasta, reserve some pasta water to help emulsify the sauce. Do not freeze leftovers as the shrimp texture will suffer.
