  • 4 large sweet potatoes (approx. 3 lbs or 1.4 kg)
  • 1/2 cup (113g) unsalted butter, melted
  • 1/2 cup (120ml) pure maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 1 cup (100g) pecan halves and pieces
  • 1/4 cup (30g) maple sugar or light brown sugar
  • 2 tbsp (16g) all-purpose flour

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes, poke with a fork, and roast directly on the rack or on a lined baking sheet for 45-60 minutes until soft. Let cool.
  2. Cut potatoes in half, scoop flesh into a large bowl, and discard skins. Mash until smooth.
  3. Stir melted butter, maple syrup, vanilla, cinnamon, and a pinch of salt into the mashed potatoes. Taste and adjust seasoning if needed.
  4. While potatoes cool, toast pecans in a small skillet over medium heat for 3-5 minutes until fragrant. Cool and chop roughly.
  5. In a medium bowl, combine flour, maple sugar (or brown sugar), and a pinch of salt. Work in cold cubed butter until mixture resembles coarse crumbs. Stir in toasted pecans.
  6. Transfer sweet potato mixture to a 9-inch baking dish and spread evenly. Sprinkle pecan topping generously over the top.
  7. Bake at 350°F (175°C) for 20-25 minutes until topping is golden brown and casserole is bubbly. Let cool for 10 minutes before serving.

Notes

Ensure sweet potatoes are fully roasted to avoid a watery casserole. Toasting pecans is essential for flavor. The casserole can be assembled the night before and refrigerated; add 5-10 minutes to baking time if baking from cold. Leftovers store in the refrigerator for up to 4 days or can be frozen cooked for up to 3 months.
