Description

An effortless yet sophisticated fall charcuterie board featuring sweet cinnamon honey ricotta, cured meats, aged cheeses, and seasonal fruits. It comes together in about 20 minutes and offers a perfect balance of savory and sweet flavors.


Ingredients

  • 16 oz whole milk ricotta
  • 3 tbsp raw honey (divided)
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1 pinch sea salt flakes
  • 2 cups assorted crackers
  • 68 fresh figs (or sliced pears/apples)
  • 4 oz sliced prosciutto
  • 6 oz aged cheddar or Manchego cheese
  • 1/2 cup Marcona almonds

Instructions

  1. Drain the ricotta in a fine-mesh strainer for 10 minutes if it appears watery.
  2. In a small mixing bowl, whisk together the ricotta, 3 tbsp honey, cinnamon, nutmeg, and sea salt until smooth and creamy.
  3. Place small bowls or ramekins on the board for height, filling one with almonds and another with extra honey.
  4. Fold prosciutto slices into loose rosettes and arrange them around the board.
  5. Arrange sliced or wedged aged cheese next to the prosciutto.
  6. Nestle crackers around the cheese and meat, leaving some negative space, and scatter almonds in empty gaps.
  7. Dollop the ricotta mixture onto the board in 3-4 large rustic circles and smooth with a spatula.
  8. Slice figs or pears and arrange them near the ricotta and cheese.
  9. Drizzle remaining honey over the ricotta and fruit, and sprinkle with a little extra cinnamon for garnish.
  10. Serve at room temperature.

Notes

For best flavor, let cheese and fruit come to room temperature 30 minutes before assembling. The ricotta mixture can be made up to 24 hours in advance and stored in the fridge. Assemble the board no more than 30 minutes before serving to prevent crackers from getting soggy.
