Description

A small-batch appetizer recipe that makes exactly 24 bite-sized pinwheels using a single package of tortillas and one block of cream cheese, perfect for couples or small gatherings.

  • 1 package (8 count) 8-inch flour tortillas
  • 8 ounces full-fat cream cheese, softened
  • 1 packet (1 oz / 28g) dry ranch seasoning mix
  • 1/2 cup (50g) shredded sharp cheddar cheese
  • 2 stalks scallions (green onions), finely chopped
  • 3 slices bacon, cooked, drained, and crumbled (optional)

Instructions

  1. In a medium mixing bowl, combine the softened cream cheese and dry ranch seasoning mix. Stir until smooth and no white streaks remain.
  2. Lay the eight tortillas on a cutting board, overlapping them slightly like shingles to form one long continuous strip.
  3. Spread the cream cheese mixture evenly over the overlapping tortillas, leaving a 1/2-inch border on the far edge.
  4. Evenly distribute the shredded cheddar cheese, chopped scallions, and crumbled bacon over the cream cheese layer.
  5. Starting from the long edge closest to you, roll the tortillas tightly into a log. Use plastic wrap to help tighten the seal and secure the ends like a candy wrapper.
  6. Place the log seam-side down on a plate and refrigerate for at least 2 hours to firm up.
  7. Remove the log from the fridge and unwrap carefully. Using a sharp knife (serrated or chef’s knife), slice the log into 1-inch thick pinwheels.
  8. Arrange on a platter and serve immediately.

Notes

Do not skip the chilling time; cold pinwheels slice cleanly while warm ones squish. Use full-fat cream cheese to prevent sogginess. If using bacon, ensure it is completely drained of grease. For gluten-free options, use GF tortillas but handle gently and chill longer.
