  • ½ cup (113g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • ¼ cup (45g) brown sugar (optional)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (170g) chocolate chips (semi-sweet or milk)
  • 2 tablespoons extra chocolate chips (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper, leaving an overhang on the long sides for handles. Lightly grease the parchment.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth with a few small lumps.
  3. Add the melted butter, granulated sugar, brown sugar (if using), egg, and vanilla extract to the bananas. Stir vigorously until well combined and smooth.
  4. Add the all-purpose flour, baking soda, and salt. Gently fold or stir with a spatula until just combined. Do not overmix; a few lumps are okay.
  5. Fold in 1 cup of chocolate chips. Pour batter into the prepared loaf pan and smooth the top.
  6. Sprinkle the remaining 2 tablespoons of chocolate chips on top.
  7. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, cover loosely with foil after 30 minutes.
  8. Let the bread cool in the pan for 10 minutes, then lift out using the parchment handles. Cool completely on a rack before slicing.

Notes

Use the ripest bananas possible for maximum sweetness and flavor. Do not overmix the batter once flour is added to avoid a dense texture. The bread can be frozen in slices for up to 3 months. For a gluten-free version, use a 1:1 gluten-free flour blend. For dairy-free, substitute butter with coconut oil or vegan butter.
