  • 8 large flour tortillas (10-inch)
  • 3 cups shredded rotisserie chicken
  • 2 cans (4 oz each) diced green chiles, drained
  • 3 cups shredded Monterey Jack cheese
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup sour cream or Mexican crema
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine shredded chicken, drained green chiles, 1/2 cup sour cream, cumin, garlic powder, salt, and pepper. Mix well.
  3. Toast tortillas in a dry skillet over medium heat for 30-45 seconds per side until pliable with light brown spots. Stack them.
  4. Spread a thin layer of chicken mixture on the bottom of the baking dish.
  5. Place two toasted tortillas side-by-side to cover the bottom. Sprinkle with cheese, then another layer of chicken mixture.
  6. Repeat the layering process (Tortillas → Cheese → Chicken) until ingredients are used, ending with a chicken layer.
  7. Pour remaining 1/2 cup sour cream over the top chicken layer and spread evenly. Sprinkle remaining cheese on top.
  8. Bake for 20-25 minutes until cheese is melted, bubbling, and golden brown.
  9. Let rest for 10 minutes before cutting to allow layers to set.
  10. Garnish with fresh cilantro and serve.

Notes

Toast the tortillas to create a moisture barrier and prevent sogginess. Drain green chiles thoroughly to avoid a watery casserole. Let the casserole rest for 10 minutes after baking to ensure clean slices. Can be frozen unbaked for up to 3 months.
