An impressive yet simple appetizer featuring a wheel of brie topped with caramelized pears, honey, and thyme. The secret technique of scoring the cheese ensures it melts perfectly without leaking.

- 1 wheel Brie cheese (approx. 8–12 oz / 225–340 g), at room temperature
- 2 medium firm pears (Bosc or Anjou), peeled, cored, and sliced into 1/4-inch thick slices
- 2 tbsp honey
- 1 tbsp butter, melted
- 1 tsp fresh thyme leaves (or 1/2 tsp dried)
- 1/4 cup walnuts or pecans, chopped and toasted (optional)
- Flaky sea salt, for finishing
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, toss pear slices with melted butter, honey, and thyme leaves until evenly coated.
- Pat the brie wheel dry with a paper towel. Using a paring knife, score the top of the brie in a crosshatch pattern, cutting about 1/4 inch deep without cutting all the way through.
- Place the scored brie in a small baking dish or oven-safe skillet.
- Arrange the pear slices on top of the brie, tucking them into the scored cuts. Layer any extra pears slightly overlapping.
- Sprinkle chopped toasted nuts over the top and drizzle with any remaining honey mixture.
- Bake for 20-25 minutes until the cheese is soft and jiggly in the center and pears are tender and golden. Avoid letting the cheese bubble over.
- Remove from oven and let rest for 5 minutes to allow the cheese to settle.
- Sprinkle with flaky sea salt and serve warm with crackers or baguette slices.
Notes
Do not slice the brie into wedges before baking; scoring the top prevents it from bursting. Use firm pears like Bosc or Anjou to prevent mushiness. Toast nuts for better flavor. Leftovers can be refrigerated for up to 2 days and reheated at 350°F.
