Description

A budget-friendly, weeknight-friendly dinner featuring thick-cut pork chops seared in a cast iron skillet and finished with a nutty brown butter and sage sauce. Ready in just 20 minutes with minimal cleanup.


Ingredients

  • 1.5 lbs bone-in, thick-cut pork chops (about 1 inch thick)
  • 1 tbsp neutral oil (avocado or canola)
  • 4 tbsp unsalted butter
  • 1 tbsp fresh sage, finely chopped (or 1 tsp dried sage)
  • 2 cloves garlic, minced
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tbsp apple cider vinegar or white wine (optional)

Instructions

  1. Pat pork chops dry with paper towels and season both sides generously with salt and pepper. Let sit at room temperature.
  2. Heat a cast iron skillet over medium-high heat. Add neutral oil.
  3. Sear pork chops for 4-5 minutes on the first side without moving them to develop a golden crust. Flip and cook for another 4-5 minutes until internal temperature reaches 145°F. Remove to a plate and tent with foil.
  4. Reduce heat to medium. Add butter to the same skillet. Watch closely until it foams, settles, and smells nutty (about 2-3 minutes). Scrape up brown bits (fond) from the pan.
  5. Add sage to the brown butter and cook for 30 seconds. Add minced garlic and cook for another 30 seconds until fragrant. Remove from heat.
  6. Return pork chops to the pan, spooning sauce over them. Let sit for 1 minute to reheat. Serve immediately with extra sauce poured over the top.

Notes

Do not overcook the pork; pull at 145°F as it will continue to cook while resting. Watch the butter closely as it burns quickly. Bone-in chops are recommended for juiciness. This recipe is naturally gluten-free.
