  • 1 cup chicken broth (low-sodium)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp black pepper
  • 1 tbsp tamari or gluten-free soy sauce (optional)
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place chicken cubes and broccoli florets in a 9×13 inch baking dish.
  3. In a large bowl, whisk together cream of chicken soup, chicken broth, tamari (if using), garlic powder, onion powder, thyme, and black pepper until smooth.
  4. Pour the liquid mixture over the chicken and broccoli. Add the uncooked white rice and gently stir to ensure rice is submerged and evenly distributed.
  5. Cover the dish tightly with foil or a lid and bake for 30 minutes.
  6. Remove from oven and check rice tenderness. If needed, add 2-3 tablespoons of hot water or broth, cover, and bake for another 10 minutes.
  7. If rice is tender, sprinkle shredded cheddar cheese over the top. Bake uncovered for 5-10 minutes until cheese is melted and bubbly.
  8. Remove from oven and let rest for 5 minutes before serving to allow sauce to thicken.

Notes

Ensure chicken thighs are cut into uniform 1-inch cubes for even cooking. Do not use instant or pre-cooked rice. If using brown rice, add 1/2 cup more broth and bake for an additional 20-30 minutes. Resting the casserole for 5 minutes is crucial for the sauce to thicken properly.
