Crispy Honey Butter Cast Iron Cornbread

  • Author: Rebecca
  • Total Time: 30-35 minutes
  • Yield: 9 servings 1x

Description

This cast iron cornbread features crispy edges and a tender, moist crumb, finished with a sweet and savory honey butter soak. It’s a quick, pantry-friendly side dish perfect for weeknight dinners.

Ingredients

Scale
  • 1 cup fine-grind yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 4 tablespoons unsalted butter (for glaze)
  • 3 tablespoons honey (for glaze)

Instructions

  1. Preheat oven to 400°F (200°C). Place an empty 10-inch cast iron skillet in the oven to preheat for 10-15 minutes.
  2. In a large bowl, whisk together cornmeal, all-purpose flour, sugar, baking powder, and salt until no lumps remain.
  3. In a separate bowl, whisk eggs, buttermilk, and melted butter until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently just until combined. Do not overmix.
  5. Carefully remove the hot skillet from the oven. Quickly pour batter into the skillet; it should sizzle. Spread evenly.
  6. Bake for 20-25 minutes until the top is golden brown, edges pull away from the pan, and a toothpick comes out clean.
  7. While baking, melt 4 tablespoons of butter in a small saucepan. Stir in honey until combined.
  8. Immediately upon removing cornbread from the oven, pour the honey butter mixture over the hot bread. Let rest for 5 minutes before slicing.

Notes

Ensure the cast iron skillet is preheated with the oven to achieve crispy edges. Do not overmix the batter to avoid tough cornbread. For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free blend. Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
