- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs, room temperature
- 1 cup buttermilk
- 1/4 cup unsalted butter, melted
- 4 tablespoons unsalted butter (for glaze)
- 3 tablespoons honey (for glaze)
Instructions
- Preheat oven to 400°F (200°C). Place an empty 10-inch cast iron skillet in the oven to preheat for 10-15 minutes.
- In a large bowl, whisk together cornmeal, all-purpose flour, sugar, baking powder, and salt until no lumps remain.
- In a separate bowl, whisk eggs, buttermilk, and melted butter until smooth.
- Pour wet ingredients into dry ingredients and stir gently just until combined. Do not overmix.
- Carefully remove the hot skillet from the oven. Quickly pour batter into the skillet; it should sizzle. Spread evenly.
- Bake for 20-25 minutes until the top is golden brown, edges pull away from the pan, and a toothpick comes out clean.
- While baking, melt 4 tablespoons of butter in a small saucepan. Stir in honey until combined.
- Immediately upon removing cornbread from the oven, pour the honey butter mixture over the hot bread. Let rest for 5 minutes before slicing.

Ensure the cast iron skillet is preheated with the oven to achieve crispy edges. Do not overmix the batter to avoid tough cornbread. For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free blend. Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
