Ingredients
- 30 oz frozen shredded hashbrowns
- 6 large eggs
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, shredded

Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
- Cook bacon in a skillet over medium heat until crisp. Transfer to a paper towel-lined plate, leaving the fat in the pan.
- Add diced onion to the hot bacon fat and sauté for 3-4 minutes until translucent and soft. Remove from heat.
- In a large mixing bowl, combine frozen hashbrowns, cooked bacon, and sautéed onions.
- In a separate bowl, whisk eggs, heavy cream, salt, and pepper until fully blended.
- Pour the egg mixture over the potato mixture and add the shredded cheese. Stir gently but thoroughly until everything is coated.
- Pour the mixture into the prepared baking dish and spread evenly. Cover tightly with aluminum foil.
- Bake covered for 20 minutes.
- Remove foil and bake uncovered for another 15-20 minutes, until the top is golden brown and the center is set but still slightly jiggly.
- Let the casserole rest for 10 minutes before slicing and serving.
