Description

  • 3 tbsp low-sodium soy sauce
  • 2 tbsp dark brown sugar
  • 1 tbsp tomato paste
  • 3 cloves garlic, minced
  • 1/2 tsp chili flakes (optional)
  • 1 tsp vegetable oil
  • 2 stalks green onions, sliced (for garnish)

Instructions

  1. Pat the pork belly cubes completely dry with paper towels and place them in a large mixing bowl.
  2. In a small bowl, whisk together soy sauce, brown sugar, tomato paste, minced garlic, chili flakes, and vegetable oil to form a thick glaze.
  3. Pour the glaze over the pork cubes and toss until every piece is evenly coated. Let sit for 5 minutes while preheating the air fryer.
  4. Preheat the air fryer to 400°F (200°C) for 3-4 minutes.
  5. Place pork cubes in the air fryer basket in a single layer, ensuring not to overcrowd the basket. Cook for 6 minutes.
  6. Shake the basket or turn the pieces with tongs. Continue cooking for another 6-9 minutes, checking every 2 minutes after the 12-minute mark, until edges are dark brown and crispy and internal temperature reaches 145°F (63°C).
  7. Transfer to a plate and garnish with sliced green onions. Serve immediately.

Notes

Patting the pork dry is crucial for crispiness. Do not overcrowd the air fryer basket; cook in batches if necessary. Watch the sugar closely as it can burn quickly at 400°F. Leftovers do not freeze well; store in the refrigerator for up to 3 days and reheat in the air fryer to restore crispiness.
