Description
A time-saving, batch-cooked pumpkin spice latte that uses frozen syrup cubes for quick assembly. This homemade version saves money and time compared to coffee shop drinks while offering customizable sweetness and flavor.

- 1 can (400g) pure pumpkin puree
- 1 cup (200g) granulated sugar
- 1/2 cup (120ml) water
- 2 tbsp (15g) pumpkin pie spice
- 1 tsp (5ml) pure vanilla extract
- 2 cups (480ml) strong brewed coffee
- 1 cup (240ml) milk (dairy or dairy-free)
- Whipped cream (optional)
Instructions
- In a saucepan over medium heat, combine pumpkin puree, sugar, water, pumpkin pie spice, and vanilla extract.
- Whisk constantly for 3-4 minutes until the sugar dissolves and the mixture becomes a thick, glossy sauce that coats the back of a spoon.
- Remove from heat and let the syrup cool to room temperature for 5 minutes.
- Pour the cooled syrup into ice cube trays, filling each about 3/4 full.
- Freeze the cubes for 2-4 hours or overnight until solid.
- Transfer frozen cubes to a ziplock bag and store in the freezer for up to 3 months.
- To assemble, drop one frozen syrup cube into a microwave-safe mug.
- Microwave milk in a separate cup until hot (about 45 seconds).
- Pour hot milk over the syrup cube and stir vigorously until dissolved.
- Add brewed coffee and stir. Top with whipped cream if desired.
Notes
Use pure pumpkin puree, not pumpkin pie filling. Ensure the syrup is thickened properly before freezing to prevent dilution. Do not boil the milk to avoid curdling. Syrup cubes can be stored in the freezer for up to 3 months.
