Instructions
- Preheat oven to 350°F (175°C). Line 18 muffin cups with cupcake liners.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, beat softened butter and sugar until light and fluffy (2-3 minutes).
- Add eggs one at a time, beating well after each. Mix in vanilla, oil, and buttermilk.
- Gradually add dry ingredients to wet ingredients on low speed, mixing until just combined.
- Add red food coloring and vinegar, mixing briefly until color is even.
- Divide batter evenly among liners, filling each about 2/3 full.

- In a large bowl, beat cream cheese and butter until smooth and creamy.
- Gradually add powdered sugar, one cup at a time, beating on low speed.
- Add vanilla and salt, then beat on high for 2 minutes until light and fluffy.
- Frost cooled cupcakes and chill for 30 minutes before serving.
