Description
Chewy, soft-centered cookies with crispy edges, packed with creamy peanut butter, semi-sweet chocolate chips, and crunchy Reese’s Pieces. An easy, kid-approved dessert that comes together in under 30 minutes.
Ingredients
- 1 cup (226g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- 1 cup (200g) packed dark brown sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup (128g) creamy peanut butter (e.g., Jif or Skippy)
- 1 cup (170g) semi-sweet chocolate chips
- 1 cup (150g) Reese’s Pieces
- Sea salt flakes, optional for sprinkling
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar on medium-high speed for 3-4 minutes until light and fluffy. Scrape down the sides of the bowl.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract and creamy peanut butter until just combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Add dry ingredients to the wet mixture and mix on low speed or by hand until no white streaks remain. Do not overmix.
- Fold in chocolate chips and Reese’s Pieces by hand.
- Scoop rounded tablespoons of dough onto prepared baking sheets, leaving 2 inches between cookies.
- Bake for 10-12 minutes, or until edges are set and slightly golden but centers still look soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to finish cooling.
- Sprinkle with sea salt flakes if desired and serve warm.
Notes
Ensure butter is softened but not melted to prevent greasy cookies. Spoon and level flour for accurate measurement to avoid dry cookies. Do not overbake; cookies will continue to cook on the hot pan. Store in an airtight container with a slice of bread to maintain softness for up to 5 days. Dough can be chilled for 30 minutes to prevent spreading or frozen for later baking.
