- 4 cups low-sodium chicken broth
- 2 carrots, diced

- 1/2 cup heavy cream
- 1 1/2 cups all-purpose flour (for dumplings)
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 2 tbsp melted butter (for dumplings)
- Fresh thyme and bay leaves (for broth)
- Salt and pepper to taste
Instructions
- Heat 4 tablespoons of butter in a large Dutch oven over medium heat. Add diced onion, carrots, and celery; sauté for 5 minutes until onions are translucent.
- Sprinkle 1/2 cup flour over the vegetables and stir constantly for 1-2 minutes to create a light golden roux.
- Slowly pour in 4 cups of chicken broth while whisking to incorporate the roux. Add thyme, bay leaves, salt, and pepper. Bring to a gentle boil, then reduce heat to simmer for 5 minutes.
- Add chicken breasts to the simmering broth. Cover and simmer for 8-10 minutes until chicken reaches an internal temperature of 165°F (74°C).
- Remove chicken from the pot and let rest for 2 minutes. Shred the chicken with two forks and stir it back into the pot.
- In a small bowl, whisk together 1 1/2 cups flour, baking powder, and salt. In another bowl, mix milk and melted butter. Pour wet ingredients into dry and stir gently until just combined. Do not knead.
- Drop spoonfuls of dough onto the simmering broth. Cover tightly and simmer on medium-low heat for 15 minutes without lifting the lid.
- Stir in heavy cream, remove bay leaves, and serve immediately.
Notes
Do not overmix the dumpling dough to avoid tough dumplings. Keep the lid on while steaming to trap heat. If using leftover rotisserie chicken, skip the chicken cooking step to save time. Dumplings do not freeze well; freeze broth and chicken separately if needed.
