Description

An indulgent yet easy-to-make side dish featuring tender Yukon Gold potatoes layered with a rich Gruyere and herb cream sauce, topped with a crispy breadcrumb crust.


Ingredients

  • 3 pounds Yukon Gold potatoes, peeled and sliced into 1/8 inch rounds
  • 2 cups heavy cream
  • 1 cup low-sodium chicken or vegetable broth
  • 2 tablespoons unsalted butter (for greasing)
  • 2 cups Gruyere cheese, freshly grated
  • 2 tablespoons fresh thyme, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Kosher salt and black pepper, to taste
  • 1 tablespoon melted butter (for topping)
  • 1/2 cup Panko breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel and slice potatoes into thin, even rounds. Do not rinse.
  3. In a large bowl, whisk together heavy cream, broth, minced garlic, thyme, smoked paprika, 1 teaspoon salt, and 1/2 teaspoon pepper.
  4. Grease a 9×13 inch baking dish with butter.
  5. Layer half of the potato slices in the dish, slightly overlapping. Sprinkle with some of the grated Gruyere.
  6. Add remaining potato slices and pour the cream mixture evenly over the top. Press down gently to submerge potatoes.
  7. Cover tightly with aluminum foil and bake for 45 minutes until potatoes are fork-tender.
  8. Remove foil, sprinkle remaining Gruyere over the top, and bake uncovered for 15-20 minutes until golden and bubbly.
  9. In the last 5 minutes, sprinkle a mixture of Panko breadcrumbs and melted butter over the top for crunch.
  10. Remove from oven and let rest for 10-15 minutes before serving to allow sauce to thicken.

Notes

For best results, use Yukon Gold potatoes for the perfect balance of starch and moisture. Do not rinse sliced potatoes as the starch helps thicken the sauce. Letting the dish rest for 10-15 minutes after baking is crucial to prevent a soupy texture. Pre-grated cheese contains anti-caking agents that can make the sauce grainy, so grate your own Gruyere.
