Description

A delicious and affordable dinner featuring chicken breasts marinated in lemon, olive oil, and Mediterranean herbs, baked on skewers for a quick, one-pan meal that costs under $3 per serving.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tbsp extra virgin olive oil
  • Juice of 2 large lemons
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 small pita breads (optional, for serving)

Instructions

  1. Preheat oven to 400°F (200°C). If using wooden skewers, soak them in water for 20 minutes.
  2. In a large bowl, combine chicken cubes with olive oil, lemon juice, dried oregano, garlic powder, salt, and black pepper. Toss to coat evenly.
  3. Let the chicken marinate for at least 10 minutes (or up to 4 hours in the fridge).
  4. Line a baking sheet with aluminum foil for easy cleanup.
  5. Thread the marinated chicken onto skewers, leaving small spaces between cubes for even cooking.
  6. Place skewers on the prepared baking sheet.
  7. Bake for 12-15 minutes, flipping halfway through, until chicken is opaque and reaches an internal temperature of 165°F.
  8. Optional: Broil for the last 2 minutes to char edges.
  9. Remove from oven and let rest for 2 minutes before serving with warm pita bread.

Notes

For best results, use store-brand chicken breasts on sale. Soak wooden skewers to prevent burning. The marinade can be made ahead and frozen with raw chicken for meal prep. If using turkey breast, increase cooking time by 1-2 minutes.
