Description

A quick, sweet, and salty flatbread topped with caramelized dried figs, tangy goat cheese, and honey. This kid-approved meal is ready in 15 minutes and costs less than a dollar per serving.


Ingredients

  • 2 large pre-made flatbread rounds (12 oz total)
  • 1.5 cups dried figs, chopped into quarters (180g)
  • 6 oz goat cheese (chèvre), crumbled (170g)
  • 3 tbsp honey
  • 1 tbsp fresh thyme, chopped (3g)
  • 2 tbsp extra virgin olive oil
  • 1 pinch sea salt (flaky sea salt preferred)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Chop dried figs into quarter-sized pieces and crumble goat cheese into small chunks. Chop fresh thyme.
  3. Place flatbreads on the prepared baking sheet. Brush edges lightly with olive oil.
  4. Distribute crumbled goat cheese evenly over both flatbreads, pressing slightly to adhere.
  5. Scatter chopped figs over the cheese. Sprinkle with fresh thyme and optional red pepper flakes. Brush tops lightly with olive oil.
  6. Bake at 400°F (200°C) for 8-10 minutes until cheese is melted and edges are golden.
  7. Switch oven to broil. Move rack to top position and broil for 1-2 minutes until figs are charred and cheese has brown spots. Watch closely to prevent burning.
  8. Remove from oven. Immediately drizzle with honey and sprinkle with sea salt.
  9. Slice into quarters or strips and serve warm.

Notes

Do not overload toppings to prevent sogginess. Pat figs dry if they are sticky. Drizzle honey after baking, not before. Leftovers do not freeze well; store in fridge for up to 2 days and reheat in a toaster oven or skillet.
