- 1 lb large shrimp (peeled, deveined, and patted very dry)
- 1 large egg (beaten)
- 1/4 cup cornstarch
- 1/4 cup almond flour
- 1 teaspoon garlic powder
- Salt and black pepper (to taste)
- 1/2 cup mayonnaise
- 1/4 cup Sriracha
- 2 tablespoons honey
- 1 tablespoon lime juice
- Cooking oil spray
Instructions
- Thaw frozen shrimp in cold water if necessary, then peel, devein, and pat thoroughly dry with paper towels. Season lightly with salt and pepper.
- In a shallow bowl, whisk together cornstarch, almond flour, garlic powder, and a pinch of salt.
- Dip each shrimp into the beaten egg, letting excess drip off, then roll in the dry coating mixture. Press gently to adhere. Place on a plate.
- Preheat air fryer to 400°F (200°C). Lightly spray the basket with oil.
- Arrange shrimp in a single layer in the air fryer basket. Cook for 5 minutes.
- Open basket, flip shrimp, and spray tops lightly with oil. Cook for another 5-7 minutes until pink, opaque, and coating is golden and crispy.
- While shrimp cook, whisk together mayonnaise, Sriracha, honey, and lime juice in a small bowl. Adjust spice or sweetness to taste.
- Transfer cooked shrimp to a large bowl, pour sauce over them, and toss gently to coat. Serve immediately.
Notes
Ensure shrimp are completely dry before coating to prevent soggy breading. Do not overcrowd the air fryer basket; cook in batches if necessary. For a vegan version, use vegan mayo and maple syrup. For keto, substitute coating with crushed pork rinds or parmesan.
